It’s very simple, but perhaps not for the faint-hearted – I use a whole clove of garlic and mince it up very finely, and mix it into very ripe, finely chopped tomatoes, with a good glug of extra virgin olive oil and some oregano and salt and black pepper. Spoon onto toasted slices of baguette :)
